**In short:** A pizza peel is a flat paddle for sliding pizza into and out of an oven. Choose a launching peel slightly larger than the pizzas you make but narrower than your oven opening: a 12 inch peel suits a 12 inch oven, and a 14 inch peel suits most 16 inch ovens. Add a small round turning peel if you cook in a hot portable oven where pizzas need turning every few seconds.

Pizza peels look simple, but the wrong one makes launching harder and can scrape the inside of a small oven. Size, material and shape all matter. Most home cooks end up with two: a square or rectangular launching peel for getting pizza in and out, and a small round turning peel for spinning it while it cooks. This guide explains what each type is for, which materials work best, and how to match the blade size to your oven and the pizzas you make. Measurements in inches are the norm in the UK pizza world, with centimetres alongside.

## What is a pizza peel?

A peel is a wide, thin blade on a handle. You build or place the pizza on it, then slide it onto the hot stone with a quick pull back. After cooking, you slide the peel under the pizza to lift it out. The word comes from the old bakers' tool used to move loaves in wood-fired ovens.

There are two main jobs. A launching peel carries the raw pizza in. A turning peel, usually smaller and round, rotates the pizza on the stone so it cooks evenly next to the flame. In a kitchen oven at lower heat, one launching peel is usually all you need.

## Launching versus turning peels

Launching peels are square or rectangular with a long enough handle to keep hands away from the heat. The blade needs to be bigger than the pizza so the edges do not hang off and fold.

Turning peels are round, often 7 to 9 inches across, on a long handle. In a portable oven at 400°C or more, the side nearest the flame cooks in seconds, so you turn the pizza a quarter every 15 to 30 seconds. A turning peel lets you nudge, lift and spin without pulling the pizza out. Our guide on [how to use a turning peel](https://peelandflame.co.uk/blog/how-to-use-a-turning-peel) shows the technique.

| Type | Typical blade | Main use |
| --- | --- | --- |
| Launching peel, 12 inch | About 30 cm wide | 12 inch ovens and pizzas |
| Launching peel, 14 inch | About 35 cm wide | 16 inch ovens, 12 to 14 inch pizzas |
| Round turning peel | About 18 to 23 cm | Turning in hot ovens |
| Large launching peel, 16 inch | About 40 cm wide | Large ovens only |

## Wood or perforated metal?

Wooden peels hold a light dusting of flour well, so dough sticks to them less while you build. They do not get hot, but the blade is thicker, which makes it harder to slide under a cooked pizza. They can warp if washed or left wet, so wipe them clean.

Metal peels, usually aluminium or stainless steel, have a thin edge that slides under a pizza easily. Perforated metal peels have holes that let loose flour and semolina fall away before launch, so less burns on the stone. Solid metal peels need more dusting. Many cooks build on wood and use metal in the oven. If launching is a problem, see [pizza sticking to the peel](https://peelandflame.co.uk/blog/pizza-sticking-to-the-peel).

- Wood: good for building, holds flour, thicker edge.
- Solid metal: thin, easy to pick up pizza, needs good dusting.
- Perforated metal: thin, sheds excess flour, popular for launching.
- Composite: durable and thin, varies by maker.

## What size pizza peel do I need?

Start with the oven opening and stone. The peel must fit through the mouth with room to spare, and should not be wider than the stone. In a 12 inch oven, a 12 inch peel is the usual match and a 14 inch peel may not fit through the opening. In a 16 inch oven, a 14 inch peel is a common choice because it handles 12 to 14 inch pizzas with room to manoeuvre. A 16 inch peel in a 16 inch oven leaves little space and can knock the walls.

Then think about pizza size. A 10 inch dough ball stretched into a 12 inch pizza needs at least a 12 inch peel. If you want larger pizzas, you need a bigger oven first. Our [pizza size comparer](https://peelandflame.co.uk/tools/pizza-size-comparer) shows how much more pizza a 16 inch gives over a 12 inch, and [12 inch vs 16 inch pizza oven](https://peelandflame.co.uk/blog/12-inch-vs-16-inch-pizza-oven) helps you choose.

| Oven size | Launching peel | Turning peel |
| --- | --- | --- |
| 12 inch | 12 inch | 7 to 8 inch round |
| 16 inch | 14 inch | 8 to 9 inch round |
| Kitchen oven | 12 to 14 inch, fits the shelf | Not needed |

Matching peel to oven

Note: Peels sit right at the oven mouth. Use heat-proof gloves, keep sleeves clear and never leave a metal peel resting inside a hot oven, as the handle can get hot enough to burn.

## Handle length and storage

Short handles are easier to control and store, and suit small portable ovens. Longer handles keep hands further from the heat, useful with larger or built-in ovens. Some peels have folding or removable handles for storage.

If you are still choosing an oven, the peel should follow the oven. ## Frequently asked questions

**What size pizza peel do I need for a 12 inch oven?** A 12 inch launching peel is the usual choice. Check it fits through your oven opening with room to spare.

**Is a 14 inch pizza peel too big?** For a 12 inch oven it can be. For a 16 inch oven it is a common size and leaves room to manoeuvre.

**Do I need a turning peel?** In a hot portable oven, it makes turning much easier and gives more even cooking. In a kitchen oven, a launching peel is enough.

**Which pizza peel should I buy first?** A launching peel sized to your oven. Add a round turning peel once you start cooking at high heat.
