Gas pizza ovens

Gas ovens are the easiest way into proper pizza: turn a dial, wait for the stone to heat, bake. Compare them by the largest pizza they take, the burner layout and the weight.

Most portable gas pizza ovens run on propane from a patio gas bottle through a regulator and hose. Many come with a regulator for the UK, but check the listing before you buy.

The burner layout decides how evenly the oven bakes. An L-shaped burner along the back and one side spreads heat further round the dome than a single rear burner, so you turn the pizza less often.

Look at the max pizza size in inches, the stated heat-up time and the weight. A 16 inch oven gives more room to launch and turn, but it is bigger and heavier to move. See 12 inch or 16 inch.

Common mistakes

  • Launching before the stone is hot: the dome may be glowing while the stone underneath is still cool.
  • Leaving the flame on full for the whole bake, which burns the edge nearest the burner.
